Our latest recipe is half muffin/half cookie and all parts delicious. ‘Best-Part-of-the-Muffin’ Cookies are best enjoyed with fresh fruit and hot coffee in bed this Sunday. Trust us, the moms in your life will thank you.
2 cups granola or rolled oats
3/4 cups flour or 1 1/2 scoops of vanilla protein powder
2 tablespoons KFactor 16 Manuka Honey
1/4 cup maple syrup or low sugar maple syrup
1 tsp vanilla extract
2 tbs organic coconut oil
1/2 tsp baking soda
1/3 cup chopped almonds
1/4 tsp sea salt
2 oz cashew milk ( not needed if you want more of a cookie texture vs a fluffy muffin texture )
Preheat the over 350F
Mix dry ingredients in a large bowl until well-combined.
Mix in wet ingredients.
Line a baking tray with parchment paper and spray with non-stick spray.
Evenly divide batter and bake for about 10-12 minutes.
(Makes about 12-15 cookies)
