Around the holidays, it’s sometimes necessary to give ourselves a little lenience with our diet. However, allowing rich, comfort foods on our plate doesn’t have to mean sacrificing nutrition! These two recipes for Manuka Honey Sangria and Oatmeal Peanut Butter Choco Chip Cookies serve as two classic examples of feel-good treats and are both made with our best-selling Manuka honey. Festive Sangria with Manuka Honey
1 bottle dry Red Wine
1/2 cup Brandy
2 cups Water or Sparkling Water
Two handfuls fruit of your choice, (we used strawberries and oranges)
2 tb Manuka Honey + 1/4 cup water ( warmed + well mixed )
Fresh Oranges or Clementines
Cinnamon Sticks or a pinch of Cinnamon in each
First combine honey with warm water to make a syrup.
In a pitcher combine wine, Brandy, water, fresh fruit and Manuka Honey syrup. Mix well.
Pour over ice or served warm with an orange slice and a cinnamon stick.
Oatmeal Peanut Butter Choco Chip Cookies with Manuka Honey
1/2 cup butter, room temperature but not warm
1/2 cup granulated sugar
1/2 cup brown sugar
1/3 cup smooth Crazy Richards peanut butter
1 tb Manuka Honey
1/2 tsp vanilla
1 cup flour
1/2 tsp baking soda
1/4 tsp salt
1 cup large oats
1 cup chocolate chips
Preheat oven to 350 degrees F.
In the bowl of a stand mixer, or in a large bowl with an electric mixer, combine butter, sugars and peanut butter until smooth. Beat in egg and vanilla until combined.
Add flour, baking soda, salt and oats and mix until just combined (don’t over mix). Stir in chocolate chips.
Lightly grease 2 baking sheets or line with parchment paper. Roll cookie dough into 1″ balls and place 2″ apart on the baking sheet (I do 12 to one baking sheet). Press down slightly (the more you flatten them, the thinner they will end up) and bake for 8-10 minutes until just set. Remove from the oven and let cool for 10 minutes before removing to a cooling rack
