Glazed Manuka Honey Donuts

Ingredients:
Donuts
- 1/2 cup organic pumpkin purée
- 28 g coconut flour
- 2 scoops vegan protein powder
- 2 eggs
- 1 tbsp Wedderspoon Manuka Honey
- 1 tbsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp ground cloves
- 1/4 tsp ground allspice
- Pinch of nutmeg
- 1/2 tsp vanilla extract
- 1 tsp melted coconut oil
- 1 tsp baking soda
- 1 tbsp stevia
- Pinch of Himalayan sea salt
Glaze
- 1 tsp Wedderspoon Manuka Honey
- 1 tbsp cinnamon
- 1 tbsp coconut oil, melted
- 1 tbsp stevia
Directions:
- Preheat oven to 325°F and spray molds with nonstick spray.
- Mix wet ingredients in a bowl. Add in dry ingredients, one at time, to prevent clumps. Add in water 1-2 Tb at a time until you have a thick batter.
- Divide batter into molds + bake for 11-15 minutes.
- In a separate bowl, mix melted coconut oil + honey. In another bowl mix stevia and cinnamon.
- If serving right away brush the donuts with melted coconut oil + honey, dip into cinnamon, stevia mix.
These also make great muffins if you don’t have donut baking molds!
