Glazed Manuka Honey Donuts

Ingredients:

Donuts

  • 1/2 cup organic pumpkin purée
  • 28 g coconut flour
  • 2 scoops vegan protein powder
  • 2 eggs
  • 1 tbsp Wedderspoon Manuka Honey
  • 1 tbsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp ground cloves
  • 1/4 tsp ground allspice
  • Pinch of nutmeg
  • 1/2 tsp vanilla extract
  • 1 tsp melted coconut oil
  • 1 tsp baking soda
  • 1 tbsp stevia
  • Pinch of Himalayan sea salt

    Glaze

    • 1 tsp Wedderspoon Manuka Honey
    • 1 tbsp cinnamon
    • 1 tbsp coconut oil, melted
    • 1 tbsp stevia

      Directions:

      1. Preheat oven to 325°F and spray molds with nonstick spray.
      2. Mix wet ingredients in a bowl. Add in dry ingredients, one at time, to prevent clumps. Add in water 1-2 Tb at a time until you have a thick batter.
      3. Divide batter into molds + bake for 11-15 minutes.
      4. In a separate bowl, mix melted coconut oil + honey. In another bowl mix stevia and cinnamon.
      5. If serving right away brush the donuts with melted coconut oil + honey, dip into cinnamon, stevia mix.

      These also make great muffins if you don’t have donut baking molds!
