Healthy Almond Candy Bars

Ingredients:

Nougat

  • 1/2 cup nut or seed butter (we used almond)
  • 1/4 cup flour (we used brown rice flour)
  • 2 Tbsp Wedderspoon Manuka Honey

Salty Caramel

  • 10 medjool dates
  • 1/3 cup full-fat canned coconut milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • Any chopped nuts for the nut layer (we used almonds)

Chocolate Coating

  • 3 Tbsp coconut oil
  • 2 Tbsp Wedderspoon Manuka Honey
  • 1/3 cup raw cacao

    Directions:

    1. To make the nougat, blend all ingredients in a food processor until a stiff ball forms. Add more flour if necessary. Shape into a flat rectangle on a piece of parchment paper and place in the freezer.
    2. Then add all the caramel ingredients in the food processor and blend until smooth (this may take awhile). Smooth on top of the nougat. Sprinkle chopped nuts on top and place back in the freezer. Ideally these should chill for at least an hour. Chop into bars.
    3. To make the chocolate coating, place water in a small saucepan on high heat with a mixing bowl on top as the double broiler. Add the oil until melted and turn the heat down to a simmer. Add the honey and cacao and mix until smooth.
    4. Dip frozen sticks into melted chocolate and place on a wire rack or parchment paper and cool back in the freezer. Allow to chill and enjoy!
