Healthy Homemade Butterfingers with Raw Manuka Honey

As we gear up for 'candy season,' or, the month or so leading up to Halloween, we are bombarded with sugary temptations. From television commercials, social media ads and emails to store circulars and the aisles at your favorite big box stores, candy is everywhere. While delicious and enjoyable to indulge in, store-bought candy is generally full of sugar and not-so-good-for-you ingredients. 

While telling yourself 'no' to these temptations can be hard, it's even more difficult to say no to your children. Why not combat tantrums before they even start by preparing healthier homemade candy for the kiddos?

Butterfingers are a popular Halloween candy, and for good reason. They're crispy, crunchy and sweet. And, they're even better when they're homemade! Treat your children to candy with just a few ingredients.

This Healthy Homemade Butterfingers with raw Manuka Honey recipe was created by Rachel Mansfield of RachlMansfield.com and we're so glad she's shared it! This healthier twist on a classic candy is incredibly quick and easy to make. It requires just four ingredients and can be made in about an hour, including setting time. It's also gluten-free and dairy-free!

Homemade candy can be just as tasty at the store-bought kind, and, the flavors are easy to customize too. Want a little more crunch? A little less sweetness? Adjust the ingredients to your liking! It's also so satisfying to make your snacks by hand, especially when the kiddos join you in the kitchen.

This year, you're likely spending more time at home than usual. Pick a day to spend in the kitchen with the family and make lots of goodies from scratch, including homemade butterfingers! Make extra to enjoy throughout the month or package some up to share with friends and family.

Ingredients:

  • 1/3 cup Wedderspoon Manuka Honey 
  • 1 cup creamy nut butter (we suggest peanut butter or almond butter)
  • 1 1/3 cup brown rice crisps cereal
  • 1 cup dark chocolate

    Directions:

      1. Warm the Manuka Honey and nut butter over medium/low heat in a small sauce pan.
      2. Mix well until well combined (about one or two minutes).
      3. Pour mixture into a medium bowl and mix in the brown rice cereal. Mix to fully combine.
      4. Put the mixture in the fridge for about 15 minutes to firm up a bit.
      5. While mixture is firming, begin melting the dark chocolate in the microwave or on the stovetop.
      6. Remove the mixture from the fridge.
      7. Form the butterfingers by taking about 2 spoonfuls of the mixture into your hand and forming into a bar shape. 
      8. Place each 'bar' on a baking sheet lined with parchment paper.
      9. Continue steps 7 and 8 until you have used all of the mixture.
      10. Place the bars in the fridge to set for 10 to 15 minutes.
      11. When you remove them from the fridge, dip each bar, one by one, into melted chocolate. (We suggest using a fork and spoon to do this)
      12. Place each dipped bar back on the baking sheet and allow them to set for a bit longer in the fridge or freezer.
      13. If you have leftover chocolate, you can drizzle a bit on the tops of each bar before placing back in the fridge or freezer. 
      14. Enjoy at room temperature, or chilled.

    If you want to make these Butterfingers extra festive, consider melting a little bit of white chocolate and using food coloring to dye it orange and purple. Drizzle on top of the bars before setting in the fridge. 

    If you will not be enjoying these right away, you can store them in the fridge for up to a week, or in the freezer for longer....though we suspect these treats will be eaten up quickly!
