Strawberry Lemonade Pie

Ingredients:

Crust

  • 2 cups raw nuts of your choice (we used almonds and pecans)
  • 1 cup Medjool dates
  • Pinch of salt

Filling

  • 1 cup raw cashews
  • 1 cup coconut milk
  • 3 Tbs coconut oil
  • 1 frozen banana
  • 1 whole peeled lemon
  • 3 Tbs Wedderspoon Raw Organic Rata Honey
  • Handful of strawberries

Directions:

  1. To make pie crust, process ingredients until the mixture starts to stick together. Then press mixture into pie dish.
  2. To make filling, soak cashews in coconut milk for at least 1 hour. Add the rest of the ingredients and blend until smooth. Pour into pie crust and chill in fridge for at least 4 hours before eating. Enjoy!
