Thai Peanut Zucchini Noodles

Tired of serving that classic pasta dish every week? Switch it up with a light, refreshing and more healthy alternative. Zucchini noodles, or, zoodles, are very easy to prepare, don’t require much prep time and won’t require you to purchase a ton of special cooking tools. If you don’t already own a spiralizer (to turn the zucchini into zoodles), don’t fret. There are a ton of alternative methods that can be found online with a quick Google search. Zucchini has a subtle taste which makes it very versatile–zoodles will take on the flavor of whatever other ingredients you choose to use. This week we’re sharing a great Asian-inspired zoodles recipe that is sure to entice your tastebuds. The spicy ingredients this recipe calls for are sweetened up a bit with our Manuka honey, leaving you with a truly sweet and spicy taste. Enjoy!

Thai Peanut Zucchini Noodles


1-2 large zucchini, washed and spiraled

1 sliced cucumber

1/2 cup sliced carrots

1 tbsp sesame seeds

1-2 green onions, chopped


1 tbsp peanut butter or peanut butter powder

1 tbsp Manuka honey

1 tbsp soy sauce

1 tsp curry powder

2 tbsp coconut milk

1/2 tsp garlic chili paste

1 tsp vinegar


Mix the dressing well and stir into veggies. Top with scallion and sesame seeds. Chill or serve immediately.
