Holiday Citrus Salad
Ingredients:
Salad
- 3 cups kale, chopped
- 1/4 cup carrots, shredded
- 1/2 cup roasted carrots
- 1/4 cup cooked beets, shredded
- 1/2 cup purple cabbage, chopped
- 1 cup roasted butternut squash, cubed
- 1 cup roasted beets, large wedges
- 1/4 cup pomegranate seeds
- 1 blood orange (for garnish and dressing)
- Optional: 1/4 cup Peruvian pickled peppers
Dressing
- 1/2 cup blood orange juice
- 1 tsp Wedderspoon Manuka Honey
- 1/2 tsp ground mustard
- 1/2 tsp fresh grated ginger
- 1 tbsp olive oil
- 1/2 tsp minced garlic
- Pinch of ground cloves
- Salt and pepper
Directions:
- Toss salad ingredients in large bowl. Mix all dressing ingredients and pour over salad, tossing while doing so to evenly distribute. Serve and enjoy!
