Classic salads are a staple on any dinner table, but sometimes its nice to switch things up a bit. Our Holiday Citrus Salad with Wedderspoon Manuka Honey is energizing, flavorful and quite pretty if we do say so ourselves. Holiday Citrus Salad

Ingredients:

Salad

  • 3 cups kale, chopped
  • 1/4 cup carrots, shredded
  • 1/2 cup roasted carrots
  • 1/4 cup cooked beets, shredded
  • 1/2 cup purple cabbage, chopped
  • 1 cup roasted butternut squash, cubed
  • 1 cup roasted beets, large wedges
  • 1/4 cup pomegranate seeds
  • 1 blood orange (for garnish and dressing)
  • Optional: 1/4 cup Peruvian pickled peppers

    Dressing

    • 1/2 cup blood orange juice
    • 1 tsp Wedderspoon Manuka Honey
    • 1/2 tsp ground mustard
    • 1/2 tsp fresh grated ginger
    • 1 tbsp olive oil
    • 1/2 tsp minced garlic
    • Pinch of ground cloves
    • Salt and pepper

      Directions:

      1. Toss salad ingredients in large bowl. Mix all dressing ingredients and pour over salad, tossing while doing so to evenly distribute. Serve and enjoy!
