Morning Glory Muffins with Manuka Honey Butter

Ingredients:
Muffins
- 1/2 cup brown sugar
- 1/2 cup coconut sugar
- 3 tablespoons Wedderspoon Manuka Honey
- 2 1/4 cups flour
- 1 tablespoon cinnamon
- 1 teaspoon baking soda
- 12 teaspoon salt
- 1/2 cup shredded coconut
- 3/4 cup raisins
- 1 apple, grated
- 1 cup carrots, grated
- 1 cup pineapple chunks
- 1/2 cup coarsely chopped walnuts or pecans
- 3 eggs
- 1/2 cup coconut oil, melted
- 1 teaspoon vanilla extract
Manuka Honey Butter
- 1 stick sweet cream butter, room temperature
- 2 tablespoons Wedderspoon Manuka Honey
- 1 teaspoon cinnamon
- 1 tablespoon coconut sugar
Directions:
Muffins
- Preheat oven to 350°F
- Mix together dry ingredients. In a separate bowl mix eggs, oil and vanilla. Combine with dry ingredients until smooth. Add remaining ingredients and mix well
- Line cupcake trays with paper liners and spray with non-stick spray. Fill each cup just under the top
- Bake for 30 to 35 minutes
Manuka Honey Butter
- Mix all ingredients together in a bowl and store in air tight container. Refrigerate until ready to use. Spread butter on warmed muffins and enjoy!
