I’m not much of a baker. All the precise measurements and exactitude of baking scares me. I’m much more of a taste-as-you-go cook, adding spices and mixing until I get it right. That’s why I was so pleasantly surprised to find this recipe for Easy No-Bake Key Lime Bites; no baking means easy preparation during busy summertime days and few ingredients makes this recipe appropriate for even the most novice dessert-maker (like me). These tasty, simple bites are perfect for your next outdoor get-together! Best part is, no baking means a cool house on a hot summer day!

No-Bake Key Lime Pie Bites

  • 4 tbsp coconut flour
  • 1 tbsp honey
  • 1-2 tbsp water
  • Pinch of Himalayan sea salt
  • 1/4 teaspoon cinnamon


  • 4 oz plain greek yogurt
  • 6 tbsp organic cream cheese (or silken tofu for vegan)
  • 2 tbsp Wedderspoon Raw Wild Rata Honey
  • 6 tbsp Key lime juice
  • Zest of a lime
  • 1/4 tsp vanilla extract
  • Pinch of Himalayan sea salt
  • Optional: 1/4 cup organic sugar, Coconut extract


  1. Mix all of the crust ingredients together until smooth. Divide mixture into 10 servings and press into cupcake molds.
  2. Bake for 10 to 12 minutes at 350°F
  3. While crusts cool, mix together filling ingredients until smooth.
  4. Divide filling on top of each cooled crust in the cupcake mold. Freeze until ready to serve!
