No-Bake Key Lime Pie Bites
Ingredients:
Crust
- 4 tbsp coconut flour
- 1 tbsp honey
- 1-2 tbsp water
- Pinch of Himalayan sea salt
- 1/4 teaspoon cinnamon
Filling
- 4 oz plain greek yogurt
- 6 tbsp organic cream cheese (or silken tofu for vegan)
- 2 tbsp Wedderspoon Raw Wild Rata Honey
- 6 tbsp Key lime juice
- Zest of a lime
- 1/4 tsp vanilla extract
- Pinch of Himalayan sea salt
- Optional: 1/4 cup organic sugar, Coconut extract
Directions:
- Mix all of the crust ingredients together until smooth. Divide mixture into 10 servings and press into cupcake molds.
- Bake for 10 to 12 minutes at 350°F
- While crusts cool, mix together filling ingredients until smooth.
- Divide filling on top of each cooled crust in the cupcake mold. Freeze until ready to serve!
