That’s why I was so pleasantly surprised to find this recipe for Easy No-Bake Key Lime Bites; no baking means easy preparation during busy summertime days and few ingredients makes this recipe appropriate for even the most novice dessert-maker (like me). These tasty, simple bites are perfect for your next outdoor get-together! Best part is, no baking means a cool house on a hot summer day!

No-Bake Key Lime Pie Bites

Ingredients:

Crust

  • 4 tbsp coconut flour
  • 1 tbsp honey
  • 1-2 tbsp water
  • Pinch of Himalayan sea salt
  • 1/4 teaspoon cinnamon

Filling

  • 4 oz plain greek yogurt
  • 6 tbsp organic cream cheese (or silken tofu for vegan)
  • 2 tbsp Wedderspoon Raw Wild Rata Honey
  • 6 tbsp Key lime juice
  • Zest of a lime
  • 1/4 tsp vanilla extract
  • Pinch of Himalayan sea salt
  • Optional: 1/4 cup organic sugar, Coconut extract

Directions:

  1. Mix all of the crust ingredients together until smooth. Divide mixture into 10 servings and press into cupcake molds.
  2. Bake for 10 to 12 minutes at 350°F
  3. While crusts cool, mix together filling ingredients until smooth.
  4. Divide filling on top of each cooled crust in the cupcake mold. Freeze until ready to serve!
