Setting a fresh batch of banana bread out on the counter on a Saturday morning is a sure way to put your family in a good mood! Banana bread is a classic, easy recipe that requires few ingredients and allows for many modifications based on personal preferences. It’s a sweet, moist and fluffy treat you can’t go wrong with. It’s also a great recipe to make if you have a bunch of overripe bananas in your kitchen. In fact, the key to the best banana bread is to use very ripe bananas rather than green bananas.
We all are used to being told not to fill up on bread, but, banana bread does have some health benefits, so don’t fret about taking an extra slice of this delicious loaf! It’s filled with bananas which are rich in fiber, potassium and other vitamins that improve digestion, can reduce risk of disease and support immune health. And, Ali’s recipe calls for pairing banana bread with Manuka Honey Butter. The obvious ingredient in this sweet, fluffy butter - Manuka Honey - also supports immune health and provides a little extra kick of natural energy, making it perfect as part of breakfast or a mid-day snack.
Ali’s Manuka Honey Butter is a great way to liven up a classic banana bread recipe, and there are plenty of other ways you can switch up the recipe as well. We suggest adding toasted walnuts, raisins, shredded coconut, chocolate chips or your favorite berries. You can even make this recipe more fall-y by adding some pumpkin spice, or even some mashed pumpkin. You really can’t go wrong with a great base and the rest is up to you!
Next, add the oat flour, baking powder and baking soda. Continue to mix together well.
Once well combined, pour the mixture into a greased cake pan or loaf pan.
Bake for 35 minutes or until firm yet springy to the touch.
While the banana bread is cooling, begin making the Manuka Honey butter by whipping together the butter, powdered sugar, and Manuka Honey.
Once the banana bread has cooled to room temperature, slice it and spread the Manuka Honey Butter over it.
