Easter season is upon us, and your local stores likely have large displays of candy wrapped in eye-catching colorful packaging. This candy is meant for Easter egg hunts, Easter baskets, and Easter parties. It’s hard to resist all the goodies in stores, but often, they are filled with artificial ingredients you may prefer not to consume. The good news is, it’s actually not too hard to make your own healthier versions of these candies.
In fact, this year, we want to share a recipe for Healthier Chocolate Peanut Butter Easter Eggs. They are creamy and delicious, full of rich peanut butter perfectly balanced out with chocolate. What better pairing is there than chocolate and peanut butter? These are just as delicious as the real thing…maybe even more! Actually, they’re even sweeter to enjoy because they are homemade with clean ingredients. Our version is shaped just like the real thing, so the kids won’t know the difference, either.
This recipe calls for minimal ingredients and can be made in under an hour’s time. Make a large batch to last you through the Easter season. They can be wrapped and placed in plastic eggs for Easter egg hunts or placed in cute treat bags to fill Easter baskets. Package some up for friends and neighbors - they will love them!
This recipe can also be made dairy-free, which is helpful for those with a lactose allergy. Just be sure to choose a dairy-free chocolate chip option. Prefer white chocolate? Swap the chocolate chips for white chocolate chips or make both versions!
While traditionally, chocolate peanut butter eggs are enjoyed at room temperature, they are also delicious when served chilled or even frozen - especially on a warm day! This also prevents them from melting as you eat them and keeps chocolate residue off your hands.
Pour the peanut butter, coconut flour and Manuka Honey into a medium sized mixing bowl and gently combine until smooth and creamy.
Using your hands and a rolling pin, form the peanut butter mixture into the shape of eggs. We suggest rolling ~1 inch balls and then using your fingers to carefully flatten them out into ovals.
Line a cookie sheet with parchment paper and place the ovals onto the tray; put the tray in the freezer for about 30 minutes to firm up.
While you’re waiting for the eggs to harden, put the chocolate chips and coconut oil into a bowl and microwave to heat them up. Heat for 30 seconds at a time, stirring in between intervals. Heat until fully melted.
Take the ovals/eggs out of the freezer.
Use two forks to carefully coat the peanut butter eggs in the melted chocolate mixture.
Place each egg on parchment paper to harden.
Enjoy right away, or refrigerate to keep them fresh.
