Plant-Based Protein Snickers Bars
Satisfy your sweet tooth this Spooky Season without all the bad stuff! Our Plant-Based Protein Snickers Bars are the perfect treat for any Halloween activity, party or school event. The best part? They're made of all-natural ingredients.
Ingredients:
Nougat Base
- 1 1/2 cup almond flour
- 1/3 cup coconut flour
- 1/2 cup peanut butter
- 1/2 cup Wedderspoon Manuka Honey
- 1/2 cup Garden of Life vanilla protein
- 1 cup unsweetened almond milk
Caramel Layer
- 1 cup peanut butter
- 1/4 cup pitted dates
- 2 tbsp Wedderspoon Manuka Honey
- 1 tbsp coconut sugar
- 4 tbsp unsweetened almond milk
- 1 tsp vanilla extract
- 1/2 tsp kosher salt
Topping
- 1/2 cup roasted peanuts
Coating
- 1 1/2 cup dark chocolate (melted)
Directions:
- Line a 9x9 baking pan with parchment paper (use a smaller pan for bigger bars).
- In a large mixing bowl, mix all of the nougat base ingredients together thoroughly using your hands.
- Press nougat evenly into a lined pan.
- Transfer to freezer for at least 30 minutes.
- Meanwhile, put all ingredients for caramel layer into a food processor and process until smooth (about one minute).
- Spread the caramel layer evenly on top of the nougat layer.
- Spread 1/2 cup peanuts evenly on top of the caramel layer and press them gently.
- Transfer to freezer for at least 30 minutes.
- Slowly melt dark chocolate.
- Line a large baking sheet with parchment paper.
- Remove the first baking pan from the freezer and cut the slab into bars (you should remove the slab from the baking pan before cutting).
- Pour melted chocolate into a large bowl and dip the bars one by one, leaving a form or small spatula underneath and a spoor to scoop chocolate on top of them until the surface of the bar is coated with chocolate.
- Use the fork or spatula to remove the bars from the melted chocolate and place them on the lined baking sheet.
- Repeat this process until every bar is coated.
- Place baking sheet in freezer for at least 30 minutes before serving.
