Ingredients:

Nougat Base

  • 1 1/2 cup almond flour
  • 1/3 cup coconut flour
  • 1/2 cup peanut butter
  • 1/2 cup Wedderspoon Manuka Honey
  • 1/2 cup Garden of Life vanilla protein
  • 1 cup unsweetened almond milk

Caramel Layer

  • 1 cup peanut butter
  • 1/4 cup pitted dates
  • 2 tbsp Wedderspoon Manuka Honey
  • 1 tbsp coconut sugar
  • 4 tbsp unsweetened almond milk
  • 1 tsp vanilla extract
  • 1/2 tsp kosher salt

Topping

  • 1/2 cup roasted peanuts

Coating

  • 1 1/2 cup dark chocolate (melted)

    Directions:

    1. Line a 9x9 baking pan with parchment paper (use a smaller pan for bigger bars).
    2. In a large mixing bowl, mix all of the nougat base ingredients together thoroughly using your hands.
    3. Press nougat evenly into a lined pan.
    4. Transfer to freezer for at least 30 minutes.
    5. Meanwhile, put all ingredients for caramel layer into a food processor and process until smooth (about one minute).
    6. Spread the caramel layer evenly on top of the nougat layer.
    7. Spread 1/2 cup peanuts evenly on top of the caramel layer and press them gently.
    8. Transfer to freezer for at least 30 minutes.
    9. Slowly melt dark chocolate.
    10. Line a large baking sheet with parchment paper.
    11. Remove the first baking pan from the freezer and cut the slab into bars (you should remove the slab from the baking pan before cutting).
    12. Pour melted chocolate into a large bowl and dip the bars one by one, leaving a form or small spatula underneath and a spoor to scoop chocolate on top of them until the surface of the bar is coated with chocolate.
    13. Use the fork or spatula to remove the bars from the melted chocolate and place them on the lined baking sheet.
    14. Repeat this process until every bar is coated.
    15. Place baking sheet in freezer for at least 30 minutes before serving.
