Pumpkin bread is a classic fall recipe that packs all the best flavors of the season into a single loaf. Our Pumpkin Bread with Manuka Honey recipe calls for a bit of Manuka Honey mixed into the bread, and also drizzled on top. This gives the pumpkin bread a touch of sweetness. Manuka Honey pairs perfectly with the pumpkin, cinnamon and ginger.
Pumpkin bread is pretty easy to make - there are minimal instructions to follow, so it’s a treat that can be made even on a busy day or weekend. It’s also pretty hard to mess this recipe up - trust us, you’ll end up with a perfectly moist, flavorful loaf in less than an hour! If you want to make this recipe a bit fancier, we suggest adding chocolate chips, pecans or walnuts - all of which make a great addition. This recipe, created for us by Well n Strong, is gluten, dairy and sugar free, making it a good class-room safe often as well. The dairy-free butter can be swapped for regular butter, if preferred.
Pumpkin bread keeps well and can be stored for a few days, but, we’re fairly certain it will get eaten very quickly and there won’t be much leftover. In fact, you should probably make a few loaves at a time! We’re also coming up on the season of giving, so if you have extra ingredients, consider making an extra loaf to share with a neighbor or friend.
Now, let’s get into the recipe.
Ingredients
¾ cup gluten free flour
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon baking soda
½ teaspoon salt
¼ cup melted dairy-free butter
1 egg yolk
½ cup monkfruit sweetener

2 tablespoons Wedderspoon Manuka Honey
1 tablespoon vanilla extract
⅔ cup pumpkin puree
Directions
Preheat oven to 350 degrees fahrenheit.
Add all ingredients to a bowl and mix well.
Pour mixture into loaf pan.
Bake for 20 to 25 minutes.
Remove from oven and let the bread cool for 30 to 45 minutes before cutting.
Drizzle with Manuka Honey before serving, and enjoy!
